2010 Saignée
The 2010 Saignée is off-dry in style this year, made especially for Tetka Desa, who likes her rose "malo slatko" which in Yugoslav, means slightly sweet. Our 2010 Saignée carries about 9g/L of residual sugar.
As in previous years, the wine was made in a saignée style by draining juice from cabernet sauvignon, merlot and shiraz grapes after about 8 hours of skin contact. We fermented the juice then regularly stirred the lees for around eight weeks to provide some texture to the fresh, fruity flavours and aromas. In 2010, about 30% of the cabernet sauvignon was fermented in older oak to introduce some complexity to the wine.
Bottled in May 2010, approximately 80 dozen produced.
