Get ready to celebrate. Our long-awaited rose will be released 1 November 2012!
Only 65 cases made, with already about 20 sold en primeur.
If you like the pink, my advice is to get in quick. I hope we will have enough for the summer, but demand for the rose has been unprecedented. I never would have thought I would have a wait list for my wines. I do like it :)
The rose this year was 100% barrel fermented from cabernet sauvignon and a small proportion of merlot. The juice was racked off the crushed red fruit after about 24 hours into 3 old oak barrels where they were fermented naturally. I love the effect lees have on wine - it gives body and texture and interest - so these wines were aged on lees and stirred regularly over autumn then sulfured in early winter. In about July we racked the wine out of barrel and heat and cold stabilised it in tank before bottling in mid-August.
It is an elegant wine with lovely delicacy and intensity, designed to complement food, like salmon or Asian cuisine.
At the moment I find it is still closed having been in bottle for only 2 months. If you can, I would urge you to cellar it for another few months. Christmas would be an ideal occasion to crack open a bottle.
